
Serves 6 - 8
1 x 213g can red or pink wild Alaska salmon
1 red onion, finely chopped
¼ cucumber, deseeded and finely chopped
2 tomatoes, deseeded and finely chopped
2 tbsps chopped fresh flat-leaf parsley or coriander
1 tsp finely chopped fresh red chilli
salt and freshly ground black pepper
2 bags tortilla chips
1. Drain the salmon, remove the skin and bones. Flake the salmon with a fork
2. Mix together the red onion, cucumber, tomatoes, parsley or coriander and chilli. Stir in the salmon flakes, then season to taste with salt and pepper
3. Arrange the tortilla chips on serving plates and place about 1 heaped teaspoon of the salsa mixture on top of each one. Serve as soon as the party begins!
Cook’s tip: Not keen on chilli? Then simply leave it out. You could always provide a bottle of chilli sauce for people to sprinkle on to their tortilla chips
