Scoop the flesh from a ripe avocado, then mash it with a few drops of lemon or lime juice and some salt and black pepper. Spread it over 2 crusty slices of fresh farmhouse loaf. Add a few rocket leaves or watercress sprigs and fold on top generous slices of wild Alaska smoked salmon. Grind over some extra black pepper and sprinkle with a squeeze of lemon or lime and serve.
