The Ultimate Wild Alaska Salmon & Cucumber Sandwich

Serves 1

Make lemon and herb butter by beating together softened butter with a little lemon zest and juice and some chopped fresh herbs (try parsley, chives, tarragon). Spread over thick slices of white or wholemeal bread and fill with succulent chunks of wild Alaska canned salmon and slices of cucumber and season with salt and freshly ground black pepper. Cut off crusts if desired, slice into triangles and devour immediately.
